Cauliflower "Rice"

This is one of my favorite cheats. Sneaking veggies onto my families plate is the only way they will eat more than one serving a day so when I can, I turn every day dishes into opportunities to increase our veggie intake.

Here is a common way to use Cauliflower as a rice base for any dish.

1. Take 1 head of cauliflower, and remove it from the stems.
2. Put them in a food processor, pulsing until it is the consistency of rice.
3. Put a skillet on medium heat, adding 1 tablespoon of coconut oil and 1 tablespoon of sesame oil.
4. Once the oils are clear, add the cauliflower and saute for 6-8 minutes.

If the head of cauliflower provides more than you need for one sitting, then you can refrigerate for a 2-3 days, or freeze for up to a month.
