Did you know that about half of the food you consume should be vegetables, and a good way to do that is to make sure you are having vegetables with every meal.
One of my favorites is sweet potatoes with my morning eggs. The sweetness of the potato goes great bacon and eggs and fills me up for hours! And because I work a 9-5 job and can't be baking potatoes at work, these are perfect make ahead and reheat when I get to work.
So on Sunday I make a batch of 5 and store them in the fridge until I am ready for them. Here is a simple way to do it.
1. Wash 5 sweet potatoes and dry them off well.
2. Using a fork, carefully poke several holes in the potatoes
3. Wrap the sweet potatoes in aluminum foil
4. Place in the oven, warmed up at 400 Degrees Fahrenheit
5. Cook for 60 minutes
6. Remove from the oven, leave them in the foil on top of the stove until they cool.
Place them in a zip lock bag in the fridge (they may leak a little liquid so this will keep your fridge clean). Then when you are ready to eat them, remove from foil and place them in a microwave safe container, and cook for 2 minutes or until thoroughly warmed. Feel free to enjoy with a little salt or butter, but I enjoy mine with just eggs and a slice of bacon. YUMMY!
