Turkey & Veggie Soup
I decided to start adding recipes because finding a dish that satisfies my whole family is hard.
I have 2 growing kids who are finicky eaters, and very different tastes at that. My husband is a huge meat and potato fan and I, as you know, try to play it light but yummy! This is one recipe that EVERYONE loved and asked for seconds.
Ingredients:
2 lb of Ground Turkey
1 Small Onion, chopped
1 Tb Coconut oil
2 Tb Italian Sausage Seasoning
1 lb Frozen Spinach (chopped)
24 oz Organic Marinara Sauce
1 Tb Coconut Oil
1 Tb Sesame Oil
4 Cups Organice Vegetable or Chicken Broth
4 Carrots, peeled and sliced
4 Celery, peeled and sliced
1 Green Pepper, chopped
1 Red Pepper, chopped
1 Zuccini, chopped
1 Broccoli head, chopped
And any others veggies you would like to add. You may need to add a little more oil depending on how many vegetables you have.
1. In a large stock pot brown the onion for a few minutes in the coconut oil to soften them up and then add the Turkey and the Seasoning. Once the Turkey is cooked through add thawed, chopped spinach and stir to cook, about 5 minutes. Then add the marinara sauce and cook for 5 more minutes.
2. Mean while, heat a wok or large pan up and add the Coconut and Sesame oils. Add the chopped veggies and cover, cooking for about 5 - 10 minutes depending on how many you have.
3. Add the veggies to the stock pot with the meat and then slowly add the chicken or veggie stock until you bring the soup to your desired consistency.
4. Heat thoroughly and enjoy!
This was enough for 2 full dinner for us. So this makes it a great candidate for eating half, and freezing half for another weeks dinner!
